Berry Pecan Chicken Salad Ingredients
- Chicken
- Mayo
- Sour cream
- Celery
- Strawberries

- Blueberries
- Pecans
- Seasoned salt
- Lemon juice
- Honey
- Parsley

Making the Chicken Salad
- Chop up the celery, fruit, and pecans and set aside
- In a medium-sized bowl, dump the cooked chicken, chopped celery and fruit, pecans, mayo, sour cream, and remaining ingredients

- Fold with a spatula until combined; add additional seasoning to taste
- Serve chilled rolled in a wrap or as a sandwich – add tomatoes and lettuce if desired

How to Serve the Chicken Salad
This is a summer fave meal for me because it’s super simple to make, light, and healthy! Here’s a few serving suggestions in case you’d like some other options!
- Pita bread
- Hearty sliced bread
- As a dip with crackers
- Over a bed of lettuce
- Plain with a fork! – HA! Yes, it’s that good!

Ingredient Swaps
- Instead of pecans, toasted almonds are a great alternative for this summer chicken salad! (though, any kind of your choice would work)
- Don’t have fresh fruit on hand? No worries! This chicken salad works well with dried cranberries or even raisons.
- Not a big berry fan? Sometimes when I have extra grapes on hand, I’ll throw them in this recipe for a little sweetness! I find that adding fruit balances out the savory flavors of the chicken and spices – which in my opinion, is the key to a fantastic chicken salad!

Ingredients
- 2 lb. chicken
- 3/4 c. mayo
- 1/4 c. sour cream
- 2 stalks celery; chopped
- 1/2 c. strawberries; chopped
- 1/2 c. blueberries
- 1/4 c. pecans

- 1 tbsp. lemon juice
- 1 tbsp. honey
- Parsley if desired
