Chewy Congo Bars
Another tasty family recipe comin’ at ya today. And if you like brownies, you’re sure to love this blondie version, aka, Congo Bars!

Now, I’m not really sure why they’re called Congo Bars. I think I read somewhere the ingredients are inspired by an exotic location in Africa. Another thing said something about Vegas. I’m really not too sure. The only thing I know is that my mom used to make these a lot when I was younger, and today, I’m putting my own spin on it!
So without further delay, let’s get baking!

Congo Bars Ingredients
- Flour
- Brown sugar
- Baking powder
- Salt
- Oil
- Eggs
- Nuts
- Chocolate chips
Baking the Congo Bars
- Preheat oven to 350-degrees
- Mix and sift dry ingredients
- Combine oil and sugar in a mixer
- Add eggs, one by one until combined
- Slowly pour in dry ingredients until combined

- Pour in a 9×13 pan and bake for 25 minutes until golden brown

- 1/2 tsp. salt
- 2/3 c. butter
- 2 1/4 c. brown sugar
- 4 eggs
- 1 c. nuts optional
- 1 package chocolate chips optional
Instructions
- Preheat oven to 350-degrees
- Mix and sift dry ingredients
- Combine oil and sugar in a mixer
- Add eggs, one by one until combined
- Slowly pour in dry ingredients until combined
- Add in nuts and chocolate chips if desired
- Pour in a 9×13 pan and bake for 25 minutes until golden brown
