Making the Chicken Wings

  • In a bowl, mix the flour, salt, black pepper, cayenne pepper, chili powder, and garlic powder to create the breading mixture.
  • Pat the chicken wings dry using paper towels. This will help the breading adhere better to the wings.
  • Dip each chicken wing into the breading mixture, ensuring they are fully coated. Shake off any excess flour
  • Place the coated chicken wings in a sealed container and refrigerate for at least 1 hour. This will allow the breading to set and create a crispy texture when fried.

Creating the Hot Honey Peach Sauce

  • In a saucepan over medium heat, melt the butter until it’s bubbling gently.
  • Add the pureed peaches to the saucepan and let them cook for about 2-3 minutes, stirring occasionally.
  • Stir in the hot sauce and honey, combining all the ingredients until the sauce is well mixed and slightly thickened. Adjust the hot sauce amount to your desired level of spiciness.
  • Remove the saucepan from the heat and set the sauce aside.

Frying the Chicken Wings

  • In a deep pot, heat peanut oil to 350°F (175°C). You’ll need enough oil to submerge the chicken wings.
  • Carefully place the coated chicken wings into the hot oil using tongs or a slotted spoon. Be cautious not to overcrowd the pot; fry the wings in batches if necessary.
  • Fry the wings for about 12-13 minutes, turning them halfway through to ensure even cooking. The wings should be golden brown and crispy.
  • Once fried, remove the wings from the oil and place them on a wire rack set over a sheet pan. This allows excess oil to drain away.
