Peanut Butter Banana Muffins

I always have ripe bananas on hand…probably because I just can’t eat them quick enough! This peanut butter banana muffin recipe (with chocolate chips) is the perfect way to use up your bananas and makes for one tasty breakfast or mid-day snack! Keep reading to see how I make them!

- Melted Butter
- Milk
- Egg
- Vanilla
- Sugar
- Creamy Peanut Butter
- Baking Soda
- Salt
- Cinnamon
- Flour
- Chocolate Chips

How to Make Peanut Butter Banana Muffins
Preheat oven to 350-degrees F
Grease a muffin pan (or use muffin papers)
Mash bananas in mixing bowl with a fork

Mix in melted butter, milk, egg, and vanilla
Incorporate the sugar
Beat the peanut butter into the batter
Scrape the sides of your bowl with a spatula

Add baking soda, salt, cinnamon
Slowly fold in flower with a spatula, then finish mixing with a beater on low
Scrape the sides of your bowl and fold in chocolate chips with a spatula

Grab a medium-sized cookie scoop and begin filling each muffin cup with batter
Bake for about 25-30 minutes until the tops are golden brown. Use a toothpick to check that the center comes out clean; if not, bake another 3-5 minutes until center comes out clean
Allow muffins to cool completely

Pop muffins out using a tiny spatula and enjoy!
TIP: These muffins freeze really well, so if you have leftovers, feel free to freeze some in a tightly sealed freezer bag and pull out to defrost when needed. I swear, they come out just a moist and fresh as they were when they were first baked –so freeze away!
TO SERVE: I like to warm up my muffins for about 10 seconds in the microwave and top it with butter, Nutella, or more peanut butter! You can also split the muffin in half and lightly toast before eating –yummy!
