Easy Pico de Gallo
We grow so many tomatoes in our yard each summer, so I pretty much alternate between making pico de gallo and greek tomato salad every week (will share this one later!)
The colors of this pico also make the prettiest presentation – I mean, just look at how vibrant it is!

Pico Ingredients
- Roma tomatoes
- Red onion
- Jalapeno

- Garlic
- Cilantro
- Lime juice
- Salt

How to Make Pico de Gallo
- Prep all the veggies by washing, seeding, then chopping/mincing


- Combine everything in a medium-sized bowl

- Add lime juice and salt to taste and enjoy with your favorite chips!

Serving Suggestions
This colorful dip pairs well with a number of things – chips being the most obvious, but here’s some other ideas!
- Pico is a great topping for tacos, quesadillas, fajitas, burritos, and anything similar
- These flavors would also compliment a queso cheese or guacamole – sprinkled either on top or mixed in!

- Grilling chicken or steak, but want to add something fresh with it? I love serving my pico over grilled chicken with rice
- Nachos – if you’re making a big plate of nachos, this pic adds a really colorful touch to it – plus, it’s prettier than salsa!

Storing the Pico de Gallo
This pico can be served immediately and if you have leftovers (this is rare in our household lol), you can store in the fridge for 2-3 days. Personally, I think the pico tastes even better the second time around because all the flavors had some time to soak in together, but that’s just me!

Easy Pico de Gallo
Ingredients
- 6 roma tomatoes; diced
- 1/2 c. red onion; chopped
- 1 jalapeno; seeded
- 3 cloves garlic; minced
- 3 tbsp. cilantro; chopped
- 1 lime; juiced
- salt; to taste
Instructions
- Chop, mince, and dice the veggies above as noted
- Combine everything in a medium-sized bowl
- Add lime juice and salt to taste
- Enjoy with your favorite tortilla chips or tacos!
